Job Description

Summary of Position:
The Prep Cook at Crooked Hammock Brewery will cook and prepare a variety of food products including meats, seafood, poultry, vegetables, sauces, stocks, breads and other food products using a variety of equipment and utensils according to the Daily Prep List. Must Enjoy the Ride!

Duties & Responsibilities:   Complete opening and closing checklists Refer to the Daily Prep List at the start of each shift for assigned duties Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and a variety of other kitchen equipment Understands and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures Portions food products prior to cooking according to standard portion sizes and recipe specifications Maintains a clean and sanitary work station area including tables, shelves, walls, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range and refrigeration equipment Attends all scheduled employee meetings and brings suggestions for improvement Promptly reports equipment and food quality problems to the Kitchen Manager Inform Kitchen Manager immediately of product shortages Uses our Standard Recipe Card for preparing all products. Do not rely on the memory of yourself or other employees Performs other related duties as assigned by the Kitchen Manager or manager-on-duty Assumes 100% responsibility for quality of products prepared Knows and complies consistently with our standard portion sizes, cooking methods, quality standards and kitchen rules, policies and procedures Handles, stores and rotates all products properly Live the brand and be a brand ambassador; make decisions in the best interest of the business every time
Qualifications:     1-3 years full-service restaurant kitchen experience preferred High School Diploma or equivalent required; Culinary degree preferred Must be at least 18 years of age and eligible to work in the United States Must have reliable transportation to/from work Must possess strong understanding of cooking methods & procedures, and knife handling skills Ability to perform tasks with accuracy, speed, and attention to detail Ability to read & follow cooking directions and other instructions pertaining to the position Ability to remain calm in a fast-paced environment Basic written & verbal communication skills Must be organized with a self-starter & motivated work ethic Must be a team player Must be able to stand, bend, stretch, lift, and carry heavy materials up to 50lbs
